Hi I'm new to all of this and have a phantom 3 standard. I inserted a micro sd card and when turning everything on the app asked for an update. I did this but later realised I had used an old micro card that was taken from my phone as it wasn't performing properly. I have now purchased a new 16gb card and put into the drone. Am I right in thinking that the updates are stored on the card as well as the pictures and videos. If so does this mean the updates are no longer on the bird. Thanks Martin

The firmware updates are stored on the bird. It would be okay to switch memory cards and try the update again.

You can install P3S firmware updates via DJI GO like this:

Don't update 'just because' - especially if your P3S is flying fine. I run my P3S with solid/older firmware and an older version of GO which I never allow to update. It's faultless, I spend my time flying it.
