1) Do I have to press the linked button on machine every time I want to fly? Seems ludicrous?

2) I have a p4p + and I've been told some 3rd party apps might work and some won't. What the consensus. Especially concerned with Litchi.

No. You should not have to relink the remote controller after it has been linked.

Litchi and all other 3rd party DJI GO alternatives cannot be installed on the P4P+ remote controller.
