Cellphone/ IPad signal

I plan on taking my p3p out to scout hogs but the reception is spotty way out in the middle of nowhere. What happens if it goes into 1x or no signal?

It should still fly fine and you'll see the onscreen camera image but you won't have good map data.

If you are talking about the cell/data signal for your mobile device, then yes it should be fine. Your P3 does not need the internet to fly.
Kevin has a point about maps. If you choose to use maps when you fly without internet access, simply make sure they are cached in advance when you do have internet access.

I actually prefer my phone in flight mode (appropriately enough) just to minimize any harmonic interference. Cache maps ahead of time and you're golden
