I am wondering if another iPhone can be used to see what I am recording via wifi or bluetooth? It will be handy for a client to see what I am seeing and not have to look over my shoulder.

Yes Litchi Vue - have only tried it rather than use it regularly but it does work.
I haven't used it, but I saw an app made in Germany, by a company called Virtego (I think) that provides mirroring on another iOS device, but I think the RC device needs a hotspot to work. The app costs $5/device, and you can mirror up to 5 iOS devices. I'd like to see that work, just to confirm it really works. That's a very cool option with iOS, if it works good.

There is an app in the App Store, Reflector, that looks like it will do what you want.
